
The best smelling/tasting coffee is the freshest roasted and freshly ground 100% Arabica coffee.
It does not much matter as to the origin of the coffee because each origin will have its own unique aromas and flavors.
When coffee is fresh roasted over 1,000 chemical compounds are created that include aromas and flavors that are called “volatiles”. They are called this because they do not last very long and soon after roasting, they begin exiting the porous coffee bean as gases.
IMO, the peak time for aromas of the freshly roasted and freshly ground coffee occur about 1-2 hours after roasting. Most coffee drinkers have never had the amazing experience of smelling freshly roasted and freshly ground coffee. It is otherworldly, and I am not exaggerating! As a home roaster myself, I get to experience this on a daily basis and it astounds me every time. Likewise with the taste, when the aromas are peaking, so are the flavors.
Because it is difficult to find coffee that is so fresh, I recommend buying green coffee and roasting and grinding it yourself. I think every coffee lover should experience this……but beware……it will spoil you for the rest of your life!
