Fresh Roasted Coffee: A Scientific Investigation at Singapore Polytechnic
Introduction
Hi, I’m Pak Kopi. Welcome to Coffee University, where I am currently based in Singapore. I am here at Singapore Polytechnic University to share the results of a fascinating study being conducted on freshly roasted coffee versus older, aged coffee.
Background and Motivation
I first arrived in Singapore about a year ago to deliver a presentation on the unique characteristics of fresh roasted coffee. The audience was highly interested in my findings, particularly regarding how fresh coffee differs from older beans. This curiosity led the institution to initiate a scientific study to validate these observations.
The Study Methodology
The research team at Singapore Polytechnic is equipped with advanced technology to analyze these differences. Specifically, they are utilizing a Magnetic Resonance Imaging (MRI) machine. This sophisticated equipment allows them to examine the molecular composition of the coffee beans, providing a scientific basis for understanding how flavor and chemical properties evolve over time.
To facilitate the study, the team was provided with a puck hockey power roaster. Since receiving this equipment, they have been conducting extensive experiments, processing the data, and inputting the results into computer systems. The goal is to uncover definitive evidence regarding the impact of freshness on coffee quality.
Research Location and Focus
The experiments are taking place within the Center for Biomedical and Life Sciences. This facility is renowned for its expertise in studying molecular compounds, making it an ideal environment for this type of analysis. Viewers will be following a series of videos detailing the progression of this research and the eventual conclusions drawn from the data.

This project is structured as a multi-part video series. Each video in the series counts toward a single academic credit for participants. Due to memory limitations on the iPhone used for filming, the content has been divided into this comprehensive series format.
