Yes, a BIG difference! Once coffee is ground it starts deteriorating, through the process of oxidation, immediately.

While still in whole bean form, before grinding, it takes about 7 days after roasting for the oxidation process to begin, and if the fresh roasted coffee is placed in a vacuum sealed bag, oxidation will not occur until that bag is opened.

Still, the best coffee will be that which has been freshly roasted, freshly ground, and freshly brewed. Immediately after roasting coffee begins decomposing and losing aromas, flavors, and chemical substances (that enhances coffee’s powerful psychoactive properties on the brain in the form of clear and focused thinking). The longer one waits after roasting, the less potent the coffee. If it is pre-ground, even less potent.

Try this experiment……take freshly roasted coffee and grind some of it and wait 2 hours before brewing. With the same coffee beans, grind just before brewing. Taste both samples side-by-side and notice the differences.
