What factors are more important for you when judging the quality of coffee at a coffee shop?

In my opinion, the most important factor is the freshness of the roast. I always ask the barista the exact roast date of the coffee they are making espresso with. The fresher the better. Unfortunately this understanding is not practiced in Cafe’s. Often, the barista does not even know the coffee’s roast date. They are not focused on this most essential factor to making great coffee.
