In fact, forty percent of these beneficial substances are gone after just 24 hours. If you can consume your coffee within that 24-hour window following roasting, you are doing the best you can.

This timeline is not arbitrary. The Specialty Coffee Association of America (SCA) has specific cupping requirements for testing coffee, mandating that the coffee must be roasted between 8 and 24 hours prior to evaluation. You might wonder why everyone isn’t following this standard. The advice is simple: drink like a pro, and you will have a much better coffee experience.

Grinding: Avoid the Oxidation Trap

The second pillar is grinding. You should never pre-grind coffee and let it sit, as it oxidizes instantly. Two hours of exposure to oxygen after grinding is equivalent to seven days of aging whole beans after roasting. This oxidation occurs because the fresh surface area of the grounds is exposed to air, degrading the quality. To prevent this, you must grind your coffee immediately before using it. Never grind and let it sit; this is a common mistake that many people make.

Fortunately, high-quality grinders are not prohibitively expensive. You can get a really good grinder for thirty to forty dollars. I highly recommend investing in one, as it will significantly change your coffee experience.

Brewing: The Final Variable

The third pillar is brewing. There are many ways to brew coffee, ranging from a French Press, which requires a coarse grind, to an espresso machine, which requires a very fine grind. It does not matter as much what specific brewing process you choose, as long as it matches your preference. However, the quality of the result depends heavily on your ingredients. When you use fresh, roasted, and freshly ground coffee, the brew you make will be infinitely better than if you use old roast coffee or pre-ground coffee.
